I’ve got a ‘monopoly’ on buttercream icing…

Last night was a quite excellent night, if I may say so myself. I baked cupcakes (from scratch! A lot easier than it sounds!) for Lame Chicken Day (more to follow) tonight and then played Monopoly until one in the morning- sans wine, believe it? with Paul, Greg and Anne. It was good to see them; we’ve been running full speed along parallel but not concurrent paths for a while and haven’t had the chance to meet up. This was the outcome:

So… the recipe for vanilla butter cream icing!

You need…

  • 6 cups of confectioner’s sugar
  • three teaspoons of vanilla
  • 2/3 cups of semi-melted butter
  • 3 tablespoons milk

In a large mixing bowl, or in your stand mixer, combine ingredients and beat on high for around four minutes. Let stand for ten minutes to allow the mixture to solidify a bit and then ice to your heart’s content.
